Chisholm's; the grand dining room

Welcome to Chisholm’s Grand Dining Room and Jeremiah’s Bar and Lounge at the Historic Caves House. Caves house was designed in 1897 by Walter Liberty Vernon as a retreat for the wealthy landowners of NSW. Mr. Vernon, a tireless former soldier who was also the NSW Government Architect from 1890 to 1911, designed many landmark buildings throughout Australia, including the Art Gallery of NSW.  At Caves House, Vernon's hotel design included an enormous grand dining room. After Vernon retired, in 1926, the grand dining room was finally completed by the same architect who designed Sydney's Queen Victoria Building, George McRae. This elegant room is now known as Chisholm's Restaurant.

Chisholm’s is one of Australia's two remaining 'grand dining rooms', and dining in Chisholm’s is one of the many 'must do' experiences whilst staying here at Jenolan Caves. The ambience and historical significance of the room is an experience in itself, and when matched with our Executive Chef’s menu, is the perfect end to a long day of exploring the Caves precinct. Chisholm’s is ideal for large groups and intimate family ‘get-togethers’. There is nothing quite as special as a romantic dinner for two by the open fireplace.

Meal options include either a 2 course meal at $65 per person or a 3 course meal for $85 per person.

What’s in a name?

Chisholm’s Restaurant is named after Miss Barbara Chisholm who worked in Caves House hotel for many years, until 1958. Now, Miss Chisholm is thought to be one of Jenolan's ghosts.
